Although, someone did say that they were expensive.
They’d be great on a camping trip, too!

Now for those of you with a bit more time on your hands,
and would rather not use those ‘blasted pancakes in a can’ …
here is a great pancake recipe that I’d like to share!
HEALTHY WHOLE-WHEAT
APPLE & PUMPKIN PANCAKES
3/4 cup canned pumpkin
1/2 cup egg whites (I purchase by the carton–cholesterol ya know)
1 TBS canola oil
1 large Granny Smith apple, shredded (about 1 cup)
2 cups fat-free milk
2 cups whole-wheat flour
1 tsp pumpkin pie spice
1 tsp cinnamon
1/2 tsp salt
1 1/2 tsp baking powder
3 TBS sugar (heaping)
In a medium-size bowl, combine pumpkin, egg whites,
canola oil, shredded apple, and milk.
In a large bowl, mix remaining dry ingredients well.
Add pumpkin mixture to dry ingredients and whisk together until blended.
Add a touch more milk if batter is too thick.
Heat a lightly oiled griddle (or large skillet) over medium heat.
Spoon roughly 1/4 cup of batter on griddle.
Cook pancakes until edges begin to brown and bubbles form on top.
Use a wide spatula to flip pancakes over and cook until bottom is golden
and pancakes are done in center, about two to three minutes.
Serve hot with melted butter, syrup, or as I do … with my fingers and nothing else!

The ‘Batter Blaster’ brings to mind somethng that I encountered once.
You know the people in the malls who stop you to take those surveys?
Yes, that’s right, the ones with the clipboards.
Well, one day, a sweet lady, with one of those clipboards,
stopped me to ask some questions regarding a new improved food product
that was being considered for marketing.
I thought, why not …
… so, she takes me to this little room, and shows me some pictures,
along with the description of this ‘new’ improved product.
Well, I must say, it was the strangest ’food’ item I’d ever encountered!
Can you even imagine … {I’ll try to describe it the best I can} …
Dill pickle relish, all compacted down tight into a flat square,
and held together (by food glue, or something??) then cut into ‘green’ spotted slices …
then individually wrapped, and packaged like the Kraft cheese slices we get in the store?!!
A bit hard to describe, but, trust me, it looked hideous …
the thought of food was the farthest thing from my mind when I first saw those pickle relish slices!
Again, I ask … can you even imagine???
I wasn’t quite sure what to think … I had to say something …
the sweet lady with the clipboard was waiting …
and it was my duty, at that time, to give it some sort of rating, and I felt bad telling her how
utterly icky it looked, so I tried to think on the positive side of the slice …
…. it would be convenient to pack on picnics, or take on a camping trip …
… easy to use … never messy like the relish in the jar …
but, one major problem that I could forsee was …
… what about the hot dogs!
We’re so use to dropping glops of relish on those!
Oh, I suppose you could ‘wrap’ it …. but would that be the same?!
And it would absolutely have to be ‘sweet’ pickle relish for my hot dog!!
So, after having seen enough of these pickled pictures,
I shared these concerns with this sweet lady and the clipboard…
she took lots of notes, and then I was free to go.
Today … 4 years later …
I’ve yet to see any trace of those Pickle Relish Slices on the shelves of our neighborhood grocery stores!
But, I suppose it was for the best!
Could you even imagine?!!
